Module 3.c - On the job training

Training of the staff working in processing establishments contributes towards strengthening their capacity so that production systems conform European standards.

On the job training is provided in the following topics:

  • ad-hoc hygiene and applied fish technology elements;
  • the application of EU regulations, interpretation of texts and drafting of specific checklists for internal assessment, monitoring and control;
  • the performance of risk analysis and internal specific risk assessment;
  • the design and adoption of control routines;
  • the design of effective cost-efficient verification routines;
  • the design and drafting of HACCP plan documents.

Exchanges between countries for training purposes are facilitated.
